Mushroom Spinach Casserole

- 3 (small boxes) of frozen spinach or 2 bags of fresh shopping list
- 2 large pkgs of sliced mushrooms shopping list
- 1 large onion chopped shopping list
- 3 cloves garlic chopped shopping list
- 1 large pkg shredded cheddar cheese shopping list
- Parmesean cheese shopping list
- salt & pepper shopping list
- garlic powder shopping list
- olive oil & butter on 2 steps use your judgement (not too much of each so it is not greasy) shopping list
How to make it
- Cook spinach (frozen according to pkg) till cooked then as follows
- Cook spinach (if fresh) as follows
- Cook in olive oil and garlic till tender
- In large frying pan, saute onions, garlic and mushrooms in a mixture of olive oil and butter till cooked
- In a butter casserole pan
- Layer half of spinach mixture, then a layer of mushroom mixture
- Top with 1/2 pkg of cheese and Parmesean cheese
- Layer balance in same manner
- Top with seasoning of salt, pepper and garlic powder
- Bake 20 minutes in 350 till cheese is melted

I made this tonight and it was pretty good. I made it exactly as written. I used frozen spinach, so I squeezed the access water out of it after it thawed. I think the bottom layer of spinach need to be seasoned with salt and pepper. I added my photo...more
