  • Oatmeal Cake:
  • 1/2 cup oats
  • 3/4 cups boiling water
  • 1/4 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 3/4 cups plain flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1/4 tsp. salt
  • Ingredients for Caramel Icing:
  • 1/2 cup brown sugar
  • 1/4 cup condensed milk
  • 1/4 stick butter or margarine
  • 1/4 cup coconut
  • 1/4 cup nuts (your favorite

Directions
  1. Preparation for Oatmeal Cake:
  2. Pour 3/4 cups boiling water over 1/2 cup oats and set
  3. aside until cool. Once cooled, mix in 1/4 cup
  4. vegetable oil, 1/2 cup brown sugar, 1/2 cup white
  5. sugar, and 1 egg.
  6. In another bowl, sift together 3/4 cups plain flour,
  7. 1/2 teaspoon baking soda, 1/4 teaspoon cinnamon, and
  8. 1/4 teaspoon salt. Mix sifted ingredients into the
  9. oatmeal mixture. Mix thoroughly. Pour batter into
  10. greased and floured 8-inch square baking pan. Bake at
  11. 350 degrees for 40 minutes.
  12. Preparation for Caramel Icing:
  13. In a saucepan over medium heat, bring 1/2 cup brown
  14. sugar, 1/4 cup condensed milk and 1/4 stick butter or
  15. margarine to a boil. Boil for 5 minutes. Remove from
  16. heat and stir in 1/4 cup coconut and 1/4 cup nuts. Mix
  17. thoroughly and pour over cake.
  18. Serves: 8

This looks great. The caramel icing would make it absolutely fabulous. One of my aunts use to make a caramel cake that I have yet to find one just like the one she made. Brings back childhood memories.

This sounds so good! Shirley is the milk in the icing Eagle Brand or evaporated? Because it says condensed I assume you meant EB but I want to make sure. Also, is it poured over the hot cake or do you cool the cake first?
