How to make it

  • Heat oil in a Dutch oven or large pot and set over medium high heat.
  • Add carrots and onion and saute for 10 min. or until browned.
  • Stir in the honey, ginger, cinnamon, chili powder, nutmeg and allspice and cook for 2 minutes or until very bubbly.
  • Add the vegetable broth and water and bring to a boil. Reduce heat and simmer for 20-30 minutes or until carrots are tender.
  • Use a stick blender to puree the soup. Reheat. Season to taste with salt and pepper.
  • Garnish with parsley or chives.
  • Enjoy!
