Spiced Carrot Soup

- 2 tbsp. olive oil shopping list
- 2 lb. carrots, thinly sliced shopping list
- 1 onion, diced shopping list
- 1/4 cup honey shopping list
- 1 tbsp. grated ginger shopping list
- 1 tsp. cinnamon shopping list
- 1 tsp. chili powder shopping list
- 1/2 tsp. nutmeg shopping list
- 1/2 tsp. allspice shopping list
- 1 carton (900 ml) vegetable broth shopping list
- 2 cups water shopping list
- salt and pepper to taste shopping list
- parsley or fresh chives to garnish shopping list
How to make it
- Heat oil in a Dutch oven or large pot and set over medium high heat.
- Add carrots and onion and saute for 10 min. or until browned.
- Stir in the honey, ginger, cinnamon, chili powder, nutmeg and allspice and cook for 2 minutes or until very bubbly.
- Add the vegetable broth and water and bring to a boil. Reduce heat and simmer for 20-30 minutes or until carrots are tender.
- Use a stick blender to puree the soup. Reheat. Season to taste with salt and pepper.
- Garnish with parsley or chives.
- Enjoy!
