Ingredients

How to make it

  • In a bowl, whisk the eggs, cabbage, carrot and onion.
  • In a saute pan, melt some of the butter and toast both sides of the bread over medium heat, adding butter as needed.
  • Remove bread and sit aside.
  • Fry egg mixture in the remaining butter until done, like an omelet.
  • Separate egg into two portions and place on two pieces of toast.
  • Top with ketchup and sprinkle with brown sugar.
  • Top with remaining slice of toast, cut in half and serve.

    Okay, I was intrigued by this. It sounds like a breakfast sandwich, but finding a way to work in cabbage and carrots for breakfast? I had to try it. :) I don't like ketchup, at all, so I swapped that for hot sauce, and I used Honey Wheat bread, cus I don't usually have just plain white bread. I'm sure it would have been good with the ketchup and white bread, too, as long as you like it! :) No reason to rate this down, other than maybe forgetting to add salt and pepper to the ingredients...it needs those, but, other than that... it all came together as expected, I'm sure...it won't be for everyone, but if you know you like the ingredients, then give it a shot! It was quick and easy, that's for sure. :) I added my pic!
