Almond Joy Muffins

- 4 cup flour shopping list
- 1 1/2 cup sugar shopping list
- 2 Tbs baking powder shopping list
- 2 tsp salt shopping list
- 4 eggs shopping list
- 1/2 cup oil shopping list
- 1/2 cup melted butter shopping list
- 1 1/2 cups coconut milk shopping list
- 2 tsp almond extract shopping list
- 1 1/4 cups coconut, DIVIDED shopping list
- 1 cup chocolate chips shopping list
How to make it
- Preheat oven to 350°.
- Sift the dry ingredients together in a large bowl.
- In a small bowl, whisk the eggs, oil, butter, coconut milk and almond extract.
- Stir into flour mixture.
- Fold in 1 cup of the coconut and the chocolate chips.
- Grease 2 large (6 muffin) muffin pans.
- Fill the tins about 3/4 full, then sprinkle the tops with the remaining 1/4 cup coconut. (an ice cream scoop makes the tins easy to fill and makes your muffins the same size)
- Bake for 25-30 minutes. Mine were done at 25, so start testing then.
- Cool in the pan for about 5 minutes, then serve.
