How to make it

  • Cook the rice as directed on the package in a separate pot.
  • Meanwhile, in a deep sauce pan sauté the onions with the meat, add spices while it cooks. You won't need oil, the meat makes it's own moisture. That was great for me because I ran out of oil. [=/
  • Add the chopped tomatoes and any extra ingredients to it and mix well. Sadly, you will have to babysit the meat while it cooks or it might burn. Be sure to use a wooden spoon for this, it works best. If you're using beans, be sure to rinse them first. I heard there was a trick to making them less gassy by soaking them in water overnight.
  • When the rice is done and the meat is cooked through, drain the rice and add it right to the meat and onions. Mix well, giving it a few moments for the flavors to mix properly.
  • Scoop into plates and serve.
  • Cooking this made my apartment a thousand and twelve degrees but it was well worth it.

    Hey Mal! :) I made a version of this... hope it's okay to post it... I know the idea is that it's meat with rice, but "dirty rice" doesn't always have meat, and I was serving it with a creole meat(mud bugs and gator ;) dish, so I didn't want/need to add the meat...so, I used beef broth to cook the rice, added beans, and really followed the spices closely, other than just adding a lil mesquite smoke, cus that's what I had. I was surprised at the cardamom flavor.... nice. It was a great base for our dinner! I took a pic... and...thank you! :)

    This is allot like my single mans surprise I made allot before I took the walk.. Actually I still make it. but I cook the rice in V8 and add bacon and green onions... its a great burrito filling to .

    Yo Mal, is this left handed or what? I love it. I would not even start on this until my third glass of grape stompins. Next time you make this rent your apt. out as a sauna. Well, maybe everyone in the city has one of those in July. Glad to see that madness came to dinner. RJ
