Beulahs Cream Caramels

- 2 cups sugar shopping list
- 3/4 cup light corn syrup shopping list
- 1/2 cup butter shopping list
- 2 cups cream, divided shopping list
- 1/2 cup broken nuts, if desired shopping list
How to make it
- Mix together sugar, corn syrup, butter, and 1 cup cream in heavy pan over heat.
- As it heats, gradually add remaining cream.
- Stir frequently as mixture begins to thicken. Cook to 254 degrees, or hard ball stage.
- Pour into a buttered 8" square pan.
- If nuts are used, sprinkle into bottom of pan before pouring.
- When cold, cut into small squares. Makes about 5 dozen.
