How to make it

  • In a microwave-safe bowl, whisk together the sugar, cocoa and cornstarch. Whisk in milk a little at a time so the mixture does not have any dry lumps.
  • Place in the microwave, and cook for 3 minutes on high. Stir, then cook at 1 minute intervals, stirring between cooking times for 2 to 4 minutes, or until shiny and thick. Stir in vanilla and butter. Stir in peanut butter chips*, then spoon into individual dessert dishes.
  • Serve warm, if desired, or chill. To chill, cover each dish with plastic wrap touching the top of the pudding to prevent skin from forming, and chill in the refrigerator.
  • *When stirring in peanut butter chips, if you want the "swirl" effect don't stir too thoroughly - otherwise the chips will melt completely and blend in with the chocolate. (It will still taste delicious, though!) and you will probably wantto serve warm, otherwise the chips do harden a bit when chilled.

    My mom used to let us stir a spoonful of peanut butter into the chocolate pudding she made on the stove. A favorite treat from childhood. Sometimes we'd do marshmallows, too! YUM!

    Thanks! Oh, I should have mentioned - will probably edit the recipe - if you chill it the pb chips will harden up a bit....I never thought of it because frankly we eat it still warm! ;)
