Hasty Chocolate Peanut Butter Swirl Pudding

- 1/2 cup sugar shopping list
- 1/3 cup cocoa shopping list
- 3 tbsp. cornstarch shopping list
- 2 cups milk (I use skim and it's still rich and creamy) shopping list
- 1 tsp. vanilla extract shopping list
- Pinch of salt shopping list
- 1 tbsp butter shopping list
- 1/2 cup peanut butter chips shopping list
How to make it
- In a microwave-safe bowl, whisk together the sugar, cocoa and cornstarch. Whisk in milk a little at a time so the mixture does not have any dry lumps.
- Place in the microwave, and cook for 3 minutes on high. Stir, then cook at 1 minute intervals, stirring between cooking times for 2 to 4 minutes, or until shiny and thick. Stir in vanilla and butter. Stir in peanut butter chips*, then spoon into individual dessert dishes.
- Serve warm, if desired, or chill. To chill, cover each dish with plastic wrap touching the top of the pudding to prevent skin from forming, and chill in the refrigerator.
- *When stirring in peanut butter chips, if you want the "swirl" effect don't stir too thoroughly - otherwise the chips will melt completely and blend in with the chocolate. (It will still taste delicious, though!) and you will probably wantto serve warm, otherwise the chips do harden a bit when chilled.
