How to make it

  • Preheat oven to 350 degrees F. Lightly coat each baking potato with oil, and sprinkle with salt. Stab a couple of times with fork times so your potato does not explode in the oven. Place potatoes in oven directly on rack. Bake until tender, about 1 hour and 10 minutes. Cut a long slit lengthwise in each potato. Open potato, and fill evenly with pork. Top with cheese, BBQ sauce, sour cream, bacon, and green onions. Serve immediately.

    Loaded baked taters are our "go to" for busy nights, too...it's what we had last night, in fact. We're not big BBQ sauce fans, but this makes a meal, for sure. :)

    I sometimes will take a potato to work and load it up with other items for a quick, easy lunch. The shredded pork will be a great addition. Thanks.
