Pesto Chicken Ciabatta Sandwiches

- 6 ciabatta buns shopping list
- olive oil to coat buns shopping list
- 3 chicken breast filleted into 6 (or you can use 6 whole breasts) shopping list
- chicken Marinade: shopping list
- 1 cup of cup olive shopping list
- 1/4 red wine vinegar shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon black pepper shopping list
- 1 teaspoon garlic powder shopping list
- 1 Tablespoon each of basil, oregano, and rosemary shopping list
- Pesto Mayo : 2 cups of fresh basil shopping list
- 3/4 cups grated parmesan cheese shopping list
- 1/2 cup of olive oil shopping list
- 1/3 cup of toasted pine nuts shopping list
- 3 medium size garlic cloves shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 4 heaping Tablespoons of mayo shopping list
How to make it
- Marinade chicken in marinade mixture for about 40 min. before grilling. See Photo
- Make the pesto:In a food processor through in the garlic cloves, the basil, and the pine nuts.Pulse a few times to chop up good. Slowly stream in the oil while processor is on. Stop and scrape the sides down. Turn processor on and add the cheese. Pulse until blended. Add the salt and pepper. See Photo
- Put about 4 Tablespoons of Mayo in a bowl and add in 3-4 Tablespoons of the pesto mixture and stir well. Taste to see if you want to add more pesto. Store in fridge until ready to use. See Photo
- Grill chicken for about 8-10.
- Coat ciabatta buns with olive oil and grill for about 3 min. See Photo
- When finished add a heaping about of pesto mayo to the top and bottom of each bun. Place the chicken in the bun and chow down. See Photo
