Portuguese Kale Soup My Way

- 1 tbls. olive oil shopping list
- 1 lb. chorizo (can also use Spanish chorizo, sliced into chunks which I prefer) shopping list
- 1 onion, diced shopping list
- 2 cloves garlic, minced shopping list
- 4 potatoes, cubed shopping list
- 6-8 cups chicken broth shopping list
- 2 carrots, diced shopping list
- 1 bunch kale, stemmed, washed and chopped shopping list
- 1 15 ounce can canellini beans shopping list
- salt and pepper to taste shopping list
- (If you like it hotter, add red pepper flakes) shopping list
How to make it
- Remove casing from chorizo
- Heat oil in skillet
- Cook chorizo and onion until fat from chorizo is cooked out
- Add garlic and cook another minute
- Drain fat
- Add other ingredients except kale
- Bring to boil then lower heat and simmer 15 minutes
- Add kale and simmer until tender
