How to make it

  • Prepare cornbread mix as the pkg. directions state. Add diced jalapeno,cheddar cheese and corn. Bake in a preheated well oiled 8"cast iron skillet at 400' for approximately 30 mins.
  • If you prefer,you can skip jalapenos and use pepper jack cheese.

    Yum! Thanks for sharing, Pat. I will probably do pepper jack cheese b/c my guy will freak if he sees me cutting up jalapenos (he's sensitive to certain spiciness).

    I think it sounds good! I'm gonna have to break that skillet out of the garage and make this for sure. Oh and Jkirk i believe he said 4oz of cheese. I'm guessing he bought a 8oz block and that's why he said use 1/2 a block? Anyway thanks Rich for the good eats!

    I would have to skip the jalapenos. How much would you say 1/2 block of cheese is? My guess is 8 oz.?
