How to make it

  • First Day: 8pm
  • Mix every ingredients from the first part it will form a kind of batter, let sit for two hours and then dump it in the fridge overnight
  • Second Day:
  • Add all the ingredients from second part to the batter which may have become foamy a bit . Incorporate the water slowly while mixing whith your hands, wooden spoon or a Kitchen Aid mixer if you're lazy. When incorporated, knead for 15 minutes by hand. Then dump it on the counter for 1 1/2 hour and throw the thing in the fridge for 14 hours. Punch down to break some bubbles and divide into 250g balls. Use right away or freeze.
  • To shape the dough, you could strech it by hand but if you're not really experimented with pizza, use a rolling pin and form an outer crust after if you want. Throw the toppings in, not too much sauce, FRESH mozzarella, and other fresh stuff, no crappy ass shredded mozzarella, use fior di latte at least !
  • Well try it yourself, I hope you get good results, To cook it, turn your oven as HIGH as you can. If you have a pizza stone, preheat for 1 hour and dump it on it for 2-4 minutes. until the crust is golden ...

    Is it 1/8 teaspoon of fresh yeast too? I finally found some at the store, but I want to make sure I use the correct amount!
    Also, do we add the ingredients from the 2nd part on the morning of day 2 (approx 12 hours after the 1st step) or is it done on the evening of day 2 (approx 24 hours after the first step)? Thx!

    This looks really good - not sure if I can "protect" it in the fridge and on the counter for the time it takes but I will definitely try it. Thanks!

    This is a lot of work, BUT worth every second! A real pizza dough recipe--right down to the tipo 00 flour, Excellent.
