Melting Lemon Ladies Recipe
This definitely melts in your mouth, hence the name. It has to sit overnight in the fridge so plan ahead.

  • 1 1/2 envelopes unflavoured gelatin
  • 1/2 cup cold water
  • 6 eggs, separated
  • 1 1/2 cups sugar, separated
  • 3/4 cup fresh lemon juice
  • 2 tsp finely grated lemon peel (zest)
  • 3/4 tsp salt
  • 2 packages (12 each) ladyfingers (soft finger-shaped dessert cookies available in baking sections of supermarkets)
  • Garnish: 1 pint whipping cream, beaten and sweetened to taste.

Directions
  1. Put gelatin in cold water to soften.
  2. Beat 6 egg yolks with 3/4 cup sugar in top of double boiler or in a bowl over a pot of simmering water. Blend in lemon juice and zest. Cook over simmering water, stirring constantly, until mixture coats the back of a spoon; should take between 10 and 15 minutes. Remove from heat and stir in softened gelatin. Set aside to cool.
  3. Beat 6 egg whites with salt until fluffy. Gradually beat in remaining 3/4 cup sugar and continue beating until mixture is very stiff. Fold in lemon mixture.
  4. Split ladyfingers in half horizontally and line the bottom of a 9x13" glass baking dish with bottom halves.
  5. Pour half of lemon mixture over the ladyfingers. Cover with remaining ladyfingers and top with remaining lemon mixture.
  6. Cover with plastic wrap and refrigerate overnight.
