How to make it

  • Preheat oven to 400 F. Rinse the chicken, inside and out, and dry thoroughly with paper towels. Stuff the bird with the quartered onion, lime, and garlic. Rub the oil over the chicken. Sprinkle the skin with either salt and pepper OR Adobo seasoning. Place the chicken in the middle of the oven and cook. A good rule of thumb for cooking time is 20 minutes per pound plus an extra 20 minutes. Baste with juices from the pan every 30 minutes. While the chicken is roasting, mix the lime juice, honey, and paprika in a small bowl. Thirty minutes before roasting is done, baste with the lime, honey, and paprika glaze. Cover with foil, if needed, to keep from burning.
  • As with all seasoning, adjust amounts to suit your taste.

    Made this tonight using a poultry seasoning blend of my own... a lil spice and garlic and herbs... and other than that, I just followed as written... it was excellent! We tore it apart and finished it all. :) This might be labeled "beginner" and it is easy enough for that, but it is delicious and pretty enough to be used to impress. Thank you for the recipe! I added my photo. :)

    OH! I love this! So glad to have seen it! I have a honey lime marinade I use on grilled chicken, never ever thought about roasting it that way! Can't wait to try this! And...welcome to Group Recipes! : )
