Honey & Lime Roast Chicken

- 1 whole chicken shopping list
- 1 onion, quartered shopping list
- 3 garlic cloves, peeled shopping list
- 1 lime, quartered shopping list
- juice of 1 lime shopping list
- 3 tablespoons honey shopping list
- 1 tablespoon olive oil shopping list
- salt & pepper to taste shopping list
- adobo seasoning, optional shopping list
- 1 teaspoon paprika shopping list
How to make it
- Preheat oven to 400 F. Rinse the chicken, inside and out, and dry thoroughly with paper towels. Stuff the bird with the quartered onion, lime, and garlic. Rub the oil over the chicken. Sprinkle the skin with either salt and pepper OR Adobo seasoning. Place the chicken in the middle of the oven and cook. A good rule of thumb for cooking time is 20 minutes per pound plus an extra 20 minutes. Baste with juices from the pan every 30 minutes. While the chicken is roasting, mix the lime juice, honey, and paprika in a small bowl. Thirty minutes before roasting is done, baste with the lime, honey, and paprika glaze. Cover with foil, if needed, to keep from burning.
- As with all seasoning, adjust amounts to suit your taste.
