Ingredients
  • 1 lb. of ground beef (or as Grossmom would do; 1/2 lb. ground veal and 1/2 lb. of ground sirloin)
  • 1/4 cup of dry bread crumbs
  • 1 teaspoon of salt
  • 1/2 teaspoon of white pepper
  • 1/4 teaspoon of poultry seasoning
  • 1 tablespoon of chopped parsley
  • 1/4 cup of milk
  • 1 egg
  • 2 Tablespoons of canola oil
  • 1 1/2 cups of beef broth, low sodium
  • 4 ounces of sliced fresh button mushrooms
  • 1/2 of white onion minced
  • 1/8 cup of white wine
  • 1 cup of sour cream
  • 1 tablespoons of flour
  • 1/2 to one whole teaspoon of caraway seeds (your taste)

Directions
  1. Combine beef and veal with bread crumbs, seasonings, milk and egg; mix lightly.
  2. Shape into 24 1 1/2 inch balls.
  3. Brown slowly on all sides in hot oil, shaking the pan frequently.
  4. Remove meat balls to a platter, leaving drippings behind.
  5. Tent with foil to keep warm.
  6. In pan, cook mushrooms and onions until very limp but not brown.
  7. Deglaze with a splash of wine (vermouth in a pinch).
  8. Add meat balls back in the pan,
  9. Cover and simmer 30 minutes.
  10. Stir the flour and the caraway seeds into a third of the cup of the sour cream. Stir vigorously.
  11. Blend all the sourcream into the broth/wine mixture and bring to a bubble and cook for three minutes to cook out the raw flour taste and the sauce thickens.
  12. Serve over spatzle or egg noodles.
