How to make it

  • Combine beef and veal with bread crumbs, seasonings, milk and egg; mix lightly.
  • Shape into 24 1 1/2 inch balls.
  • Brown slowly on all sides in hot oil, shaking the pan frequently.
  • Remove meat balls to a platter, leaving drippings behind.
  • Tent with foil to keep warm.
  • In pan, cook mushrooms and onions until very limp but not brown.
  • Deglaze with a splash of wine (vermouth in a pinch).
  • Add meat balls back in the pan,
  • Cover and simmer 30 minutes.
  • Stir the flour and the caraway seeds into a third of the cup of the sour cream. Stir vigorously.
  • Blend all the sourcream into the broth/wine mixture and bring to a bubble and cook for three minutes to cook out the raw flour taste and the sauce thickens.
  • Serve over spatzle or egg noodles.
