German American Caraway Meat Balls

- 1 lb. of ground beef (or as Grossmom would do; 1/2 lb. ground veal and 1/2 lb. of ground sirloin) shopping list
- 1/4 cup of dry bread crumbs shopping list
- 1 teaspoon of salt shopping list
- 1/2 teaspoon of white pepper shopping list
- 1/4 teaspoon of poultry seasoning shopping list
- 1 tablespoon of chopped parsley shopping list
- 1/4 cup of milk shopping list
- 1 egg shopping list
- 2 Tablespoons of canola oil shopping list
- 1 1/2 cups of beef broth, low sodium shopping list
- 4 ounces of sliced fresh button mushrooms shopping list
- 1/2 of white onion minced shopping list
- 1/8 cup of white wine shopping list
- 1 cup of sour cream shopping list
- 1 tablespoons of flour shopping list
- 1/2 to one whole teaspoon of caraway seeds (your taste) shopping list
How to make it
- Combine beef and veal with bread crumbs, seasonings, milk and egg; mix lightly.
- Shape into 24 1 1/2 inch balls.
- Brown slowly on all sides in hot oil, shaking the pan frequently.
- Remove meat balls to a platter, leaving drippings behind.
- Tent with foil to keep warm.
- In pan, cook mushrooms and onions until very limp but not brown.
- Deglaze with a splash of wine (vermouth in a pinch).
- Add meat balls back in the pan,
- Cover and simmer 30 minutes.
- Stir the flour and the caraway seeds into a third of the cup of the sour cream. Stir vigorously.
- Blend all the sourcream into the broth/wine mixture and bring to a bubble and cook for three minutes to cook out the raw flour taste and the sauce thickens.
- Serve over spatzle or egg noodles.
