- 2lbs ground meat(lamb, venison, lean beef, pork, turkey or even chicken can be used, but I'd suggest mixing the poultries with another meat instead of using them exclusively) shopping list
- 1 small onion, grated shopping list
- 3-4 cloves garlic, minced shopping list
- 1T ground cumin shopping list
- 1t Dijon or dry mustard shopping list
- 1t fresh nutmeg, ground shopping list
- juice from 1/2 lemon shopping list
- 2T fresh oregano, chopped or 1T dried shopping list
- kosher or sea salt and fresh ground black pepper shopping list
- 6 flat breads or pitas shopping list
- sliced red onion, tomatoes, lettuce(or spinach leaves), etc, if desired for serving shopping list

How to make it
- Combine all ingredients other than pitas, garnishes and sauce.
- Mix with hands like you would meatloaf until well blended.
- Now, you can either just stick the bowl in the fridge and let it rest for a couple hours as is, OR, you can mold mixture to form a log shape and tightly wrap with plastic wrap and then refrigerate.
- For the former, when ready to serve, just brown the meat lightly(you want it done, but not heavily browned) in heavy skillet(I used cast iron)
- For the latter, carefully slice 1/2 inch patties off of the loaf on a bias to create about 12-15 pieces.
- Brown the patties in heavy skillet, turning as needed to cook through, as above, but not overly brown.
- Serve on pitas or flat bread with sauce and garnishes.
