How to make it

  • Combine all ingredients other than pitas, garnishes and sauce.
  • Mix with hands like you would meatloaf until well blended.
  • Now, you can either just stick the bowl in the fridge and let it rest for a couple hours as is, OR, you can mold mixture to form a log shape and tightly wrap with plastic wrap and then refrigerate.
  • For the former, when ready to serve, just brown the meat lightly(you want it done, but not heavily browned) in heavy skillet(I used cast iron)
  • For the latter, carefully slice 1/2 inch patties off of the loaf on a bias to create about 12-15 pieces.
  • Brown the patties in heavy skillet, turning as needed to cook through, as above, but not overly brown.
  • Serve on pitas or flat bread with sauce and garnishes.
