Ingredients

How to make it

  • In large, deep, heavy pan or skillet(I used my cast iron chicken fryer:), heat oil with onion and jalapenos.
  • Saute about 5 minutes to soften.
  • Add garlic
  • Combine cumin, paprika, coriander, salt and pepper and sprinkle half over 1 side of each piece of chicken.
  • Add chicken to pan, seasoned side down, then immediately season top sides.
  • Let cook for about 7 minutes, then turn each piece in pan.
  • Pour salsa over chicken.
  • Add juice from 1 lime
  • Cover and simmer over medium high heat, turning chicken once, if desired, until chicken is done.(this will vary depending on type and thickness of chicken, but cook til thickest part is 165)
  • Meanwhile, cook pasta per package directions.
  • While pasta is cooking, melt butter in medium skillet over medium low heat.
  • Add onion and garlic and cook for about 10-12 minute until onion is softened and starting to very slightly brown. Do not burn.
  • Turn off heat.
  • Immediately stir in sour cream, and juice and zest from 1 lime.
  • Toss well with drained pasta, then add cotija and cilantro and toss, again.
  • To Serve

  • Place piece of chicken over bed of pasta, with slotted spoon, remove spoonful of salsa and over chicken.
  • Sprinkle with shredded cheese, tortilla strips and more cilantro, if desired.

    Given limitations of my pantry and my grocery, I always have to make substitutions. Given that, this came out really good, but spicier than I was expecting. Duh! Tex-Mex! I thought the pasta mix was very mellow, maybe too much so, until I tasted the chicken mix. Wow. This married up real nice with the pasta. I did use chili powder in place of the coriander and I wish I would have just omitted that, as it did over-power a lot of the other nice flavors in this dish. To do it again, I would omit the chili powder and use whole chicken breasts rather than pieces. 5 stars the way keni wrote it. 4 stars the way I made it. Thank you keni!

    Wow, that's really inventive and looks delicious. My sister in law, who is coming next week, likes Tex Mex flavor but can't eat tomatoes. I'll just leave the salsa off her chicken. Thank you for posting this.
