Balsamic Sage Chicken

- 4 chicken thighs, washed and skins removed shopping list
- Approximately 3 Cups potatoes, cubed. I used new potatoes but cubed them anyway, because I felt like it. shopping list
- 4 Large Stuffing mushrooms, sliced shopping list
- 1/2 spanish onion, diced shopping list
- 2 cloves garlic, diced shopping list
- 1/3 Cup balsamic vinegar shopping list
- 1/4 Cup extra virgin olive oil, separated shopping list
- Fistful of fresh sage leaves, chopped shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat the oven to 400 F.
- Layer the vegetables on the bottom of a roasting pan. Put half the olive oil, salt and pepper in with the veggies and mix it around. Put some of the sage in there too if you want. Layer the chicken thighs on top, then pour the remaining olive oil, balsamic vinegar and sage on top.
- Shove that sucker in the oven and forget about it for an hour. Before you know it, that awesome dinner is served and you'll have a happy belly. Mmm-mmm, good to the last nom.

Made this tonight, Mal, and it was wonderful! :) So easy but tasty. No one flavor screamed at you, but they blended to create a nice, rustic chicken dinner. I did use skin on thighs and sprinkled a touch of one of my own poultry blends to give color...more
