- 1lb dry black eyed peas, rinsed and soaked over night shopping list
- 1lb left over ham steak, diced shopping list
- 1 large onion, diced shopping list
- 1-3 jalapenos, diced shopping list
- 4 stalks celery, chopped shopping list
- 3 cloves garlic, minced shopping list
- 3 cups chicken, pork, or veggie stock shopping list
- 28oz enchilada sauce(this is the oops... I meant to use a can of tomato sauce way back when and put this in instead... beginning the new tradition! This time, I used this sauce Basic enchilada sauce shopping list
- 1t liquid smoke* shopping list
- kosher or sea salt and fresh ground black pepper shopping list
- 1lb greens(turnip, collard, or mustard), roughly chopped shopping list
- about 6-8 servings wild rice, cooked shopping list
- *I now use applewood smoked salt and our ham is smoky, so I don't use any extra liquid smoke shopping list
How to make it
- Combine all ingredients except greens, rice and salt and pepper in large slow cooker.
- Cook on low for about 10-12 hours, until beans are tender.
- Taste and season, as needed.
- Add greens a lil at a time, if needed, until all our warmed through and wilted.
- Serve over cooked wild rice.
