Baja Chicken Subs With Chipotle Lime Mayo

- 6 sub/hoagie rolls(about 4-6 inches, each), split shopping list
- olive oil shopping list
- leaf lettuce shopping list
- red onions, sliced thin shopping list
- ripe tomato, sliced shopping list
- 1lb pepperjack cheese, sliced shopping list
For Chicken
- 2lbs boneless, skinless chicken(I used tenderloins,and I would recommend them, but thighs or breasts would work, I'm sure) shopping list
- 2T dry rub consisting of: paprika, cumin, cayenne, chili, coriander, Mexican oregano, etc. I used 1T of this blend, Latin Inspired Spice Mix,and mixed it with 1T of smoked paprika and it was perfect. shopping list
For Chipotle lime Mayo
- 1 cup mayonnaise shopping list
- 1-2 chipotles, whole shopping list
- 1T adobo sauce shopping list
- juice from 1/2 lime shopping list
- 2T fresh cilantro shopping list
How to make it
- Drizzle olive oil lightly over cut sides of bread.
- Grill for a few seconds to toast, lightly.
- Sprinkle olive oil over onion rings and toss them on the grill, too, just for a minute or two to soften, slightly.
For Chipotle Lime Mayo
- Combine all ingredients in blender or food processor and process until combined.
- Alternately, just rough chop the pepper and cilantro and mix by hand. This is what I did. :)
For Chicken
- Sprinkle each side of chicken pieces with lime juice then the dry rub
- Grill, or broil, until done. (tenderloin pieces will only take a few minutes on each side, obviously, thighs or breasts will take longer)
To Assemble
- Spread mayo over top part of roll.
- Add slices of cheese to bottom roll
- Top with chicken, onion, tomato and lettuce.
