To each his or her own, but steeping more than 5 minutes can lead to bitter tea. Lipton recommends no more than 3 to 5 minutes. And start with cold water and bring just to a boil and let simmer for 3 minutes. No more. The water quality has a lot to do with the outcome. Hard water doesn't produce the best of tea. The mineral content destroys the flavor, so bottled or filtered water may be a better choice. In the South when we order tea, it comes iced. Always. And Southern babies come into this world with a gene that is programmed so they instinctively know how to make tea as soon as they are old enough to boil water. A wedge of lemon on the side is also traditional. The amount of sugar is a matter of taste. Most southern restaurants offer sweet or unsweet and its about a 50-50 split on who drinks what.


I guess it truly is all about preference. I absolutely hate lemon in my ice tea or any other beverage....so I never have any in my kitchen!!


Ive let my tea steep for alot longer and it has never hurt the taste of it....If you like it this way.. this is the way you need to fix it....


My British ancestors would be rolling in their graves if they knew you steeped tea for up to 2 hours - lawdy! Would you let your coffee languish for that long - of course not. 4/5 minutes in soft water is all that's required - really!

In England they have a named for over-steeped tea: 'Stewed', and if you've ever tasted the same, you'd concur - days old stew isn't too far from the truth - yuck!


To each his/her own is right. Don't let a couple of comments get you down. I love my tea STEWED!


I think it is pretty intriguing to find so much discussion about Southern sweet tea! (Probably because my family drinks a gallon each week!) There was a recent article on Slate.com regarding the phenomena of sweet tea. Here's the link if you are interested.

Don't let the criticism get to you. You are your own master chef. If you like it - then the recipe is 4 star. No matter how good the recipe - you will always have one to be negative.


Hi, it's me :-) ... assuming this was some sort of tea recipe.
What about "Refridge Tea" that's always steeped for hours. It's the old recipe for "Sun Tea" that they don't recommend using any more because of bacteria growing in it. Now they say to put it in the fridge and let it sit for several hours. My taste in ice tea is a little lemon, a little sugar, and a lot of ice. Everyone's taste is different...in brewing too. Best wishes.


Drama over some tea???? My meat loaf recipe is not fancy but if someone wants to add to it or tell people they dont think its a good idea thats fine. I am going to keep the recipe on here and make it they way I want still because (OTHERS MIGHT LIKE IT THAT WAY)
