How to make it

  • Preheat oven to375
  • Mix oil, garlic, salt and pepper in large mixing bowl
  • Add potatoes and toss to coat
  • Place on baking sheet in single layer (I use non stick foil to line)
  • Bake 30-40 minutes, flipping over half way through

    This is a wonderful recipe for use like catsup as a condiment or as a fabulous salad dressing. So far, I have used it for everything except a salad dressing (will try it one of these days). It is good enough to have just by the spoonful. It is quick and delicious. Once you try it, it will become a must-have in the frig. A jar of it is also a nice gift. The recipe came from a couple of great country cooks in rural North Dakota.

    Salad Dressing (or whatever)
    ½ cup onion, chopped (adjust onion amount according to preference)
    1 ½ cups canola oil
    1 ½ cups catsup
    ½ cup cider vinegar
    1 cup sugar + a little extra
    1 tsp. celery salt
    ½ tsp. garlic salt
    1 tsp. paprika

    Chop (puree) onion in small food processor. Put oil, catsup, vinegar and spices in blender. Use generous amounts of the spices – not heaping, but do not level. Blend well. Put blender on grate and add onions. Mix well. Add sugar gradually, using liquefy setting. Make sure dressing is completely blended so it will not separate.

    While attending the North Dakota Winter Show last week, I had a fabulous potato treat. The potatoes were sliced potato-chip thin, deep fried and then sprinkled with Lawrys garlic salt (with the parsley) and Ranch Dressing. I have not tried making them at home yet, but plan to. They were even good cold in the car coming home to Fargo. Someone also said they could be warmed up in the microwave for a few seconds, too.
