How to make it

  • Place diced shallot in a bowl,add vinegar and a pinch of salt. Let sit 10-15 mins.
  • Cut lemon in 8 wedges. Remove the seeds and core gently and cut each wedge in half(lengthwise). Slice wedges crosswise into thin slivers. This will make about 1/2 c.
  • combine lemon slivers,shallot and another pinch of salt. Stir in olive oil,parsley,chives and some fresh ground pepper. Taste for seasoning.

    Sounds so good! We have a 2 yr old meyer lemon tree. Last yr it put off HUGE lemons and on such a little tree it was silly looking! Can't wait till they are big enough to try this...thanks!

    I love this recipe, Pat! One of my faves from Chez Panisse cookbook by Alice Waters. It's a good one. I've only made it with regular lemons, I'm going to have to try with meyer lemons now that I have found them!! I noticed by your pics that both you and my fave food blog, Laura's Best Recipes, have made this with sliced shallots instead of finely diced. So, I was wondering, do you have a preference? I haven't done the sliced. This is an awesome recipe! GREAT POST!
