How to make it

  • Mince the celery and onions. Shell and chop the hard boiled eggs. Mix all together well with mustard, mayo, splenda, salt and pepper.
  • Server over greens or in a lovely Coconut Flour Tortillas like I'm going to do.

I go home for lunch in about 10 minutes - and I have hard boiled eggs in the fridge. Guess I know now what I'm going to have... :) Except I'll have to use "regular" mayo - no time to make the Otterpond kind.
