- 2lbs boneless chicken, cooked and shredded(you can use left over chicken, here, no problem, as long as it's not overly seasoned. I tossed some BLSL thighs in the slow cooker with a lil stock, lime juice and hot sauce to "poach" and was very happy with the results) shopping list
- 1/2 stick butter, melted shopping list
- 1 cup hot wing sauce shopping list
- 8oz pepper jack cheese, shredded(I used half this and the other half was an amazing chipotle cheddar I recently stumbled on. SO good!) shopping list
- 12-15 4" corn tortillas(I used half plain and half chipotle corn tortillas, in which I put the chicken mixture and the chipotle cheese) shopping list
- diced tomatoes, for garnish shopping list
- diced avocado, for garnish shopping list
avocado Dipping Sauce
- 1 ripe avocado, pitted and removed from skin shopping list
- juice from 2 limes shopping list
- 1/2 cup mayonnaise shopping list
- about 3T fresh cilantro shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Place shredded chicken in large bowl.
- In smaller bowl, combine hot wing sauce and butter and stir well.
- Pour over chicken and toss to coat.
- Warm tortillas between damp towel in microwave for a few seconds, if needed, to ease rolling.
- Add about 2-3T of the chicken mixture along tortillas, add about 1T shredded cheese over the chicken, then roll up, enchilada style.(open ends, no need to tuck them in :)
- Place, seam side down, onto baking s stone, cast iron or in a casserole dish.
- Repeat until all tortillas are filed, or meat mixture is gone, whichever comes first. :)
- Bake at 400 for about 15 minutes, until warmed through, cheese is melty, and tortillas are slightly crisp.
- Serve with avocado sauce, diced tomatoes, avocado and cilantro, if desired.
For Avocado Dipping Sauce
- Combine all ingredients in blender or food processor until smooth.
- These would also be good with my Chipotle Lime Dipping Sauce

We really liked these and they were simple to throw together after a long day at work. For the chicken I used a pre-cooked rotisserie that I picked up from the deli. I'll admit that I am not a big fan of mayo and so the sauce was a little too mayo-y ...more
