Idaho Nachos

- 2lbs ground meat(beef, venison, pork, chicken, etc..I used venison) shopping list
- 2-2 1/2lbs potato rounds shopping list
- 2 1/2T Mexican or Latin flavored spice blend(I used, and recommend, a recipe from here, which I've included in the direction section) shopping list
- 1t brown sugar(or powdered honey, if you have it...that's what I used :) shopping list
- about 1 cup refried beans, warmed(homemade or canned) shopping list
- 1 large tomato, seeded and diced shopping list
- 1 cup ripe black olives, sliced shopping list
- about 1 cup sour cream shopping list
- about 1 cup guacamole(homemade or purchased) shopping list
- 8-12oz shredded colby or cheddar cheese(, shredded(don't buy the preshredded, just shred it, then toss it with about 1t of corn starch for every 8oz of shredded cheese...this will stop it from clumping but not change the taste or texture in dishes:) shopping list
- optional: sliced green onion, cilantro, diced jalapenos shopping list
How to make it
- Cook meat in medium skillet over medium heat until done.
- Drain, if necessary. (I don't drain... I use lean meat and I let the lil bit of oil still on the meat mix with the seasoning to distribute better :)
- Add 1 1/2T of the Latin seasoning(Latin Inspired Spice Mix) and stir well while keeping the stove on very low heat to keep warm.
- Bake potato rounds per package directions making sure to bake them until they are crisp.
- Let rest about 5 minutes then carefully put them in a large metal or plastic bowl.
- Combine 1T Latin seasoning and brown sugar or honey powder in small bowl.
- Sprinkle over potato rounds and carefully toss to coat.
- Layer the Idaho Nachos as follows: Potato rounds, refried beans, meat, sprinkle with tomatoes, olives, and jalapenos and green onions, if using, then top with shredded cheese, and dollops of sour cream and guacamole and cilantro.

The family LOVED it! I had no time to stop for ingredients for the spice blend but it was fantastic anyways. I always mix my refried beans and meat together so the kids don't have a cow over the beans.
