Crawfish Roll

- 1lb cooked crawfish meat, not chilled shopping list
- 1/2 stick butter, melted shopping list
- several dashes of hot sauce shopping list
- 1/4 cup mayonnaise shopping list
- juice from 1/2 lemon shopping list
- 2T fresh chives, chopped shopping list
- kosher or sea salt and fresh ground pepper shopping list
- 6 hot dog style rolls, but either get the top split ones, or get some that aren't split, yet, and cut them down the top, yourself :) shopping list
- 2T butter, softened shopping list
How to make it
- Combine the hot sauce and the melted butter.
- Add lemon juice.
- In medium bowl, combine crawfish meat with chives.
- Drizzle with the melted butter mixture and toss well.
- Add mayo and salt and pepper and carefully stir to combine.
- Spread a light coating of the softened butter over the bottoms and sides of all the rolls.
- Lightly toast in a lightly oiled pan on all buttered sides.
- Fill rolls with the crawfish mixture and drizzle with a tiny bit more of melted butter, if desired
- Apparently it's the law that these be served with pickles and chips, so..... do that! ;)
