How to make it

  • Combine the hot sauce and the melted butter.
  • Add lemon juice.
  • In medium bowl, combine crawfish meat with chives.
  • Drizzle with the melted butter mixture and toss well.
  • Add mayo and salt and pepper and carefully stir to combine.
  • Spread a light coating of the softened butter over the bottoms and sides of all the rolls.
  • Lightly toast in a lightly oiled pan on all buttered sides.
  • Fill rolls with the crawfish mixture and drizzle with a tiny bit more of melted butter, if desired
  • Apparently it's the law that these be served with pickles and chips, so..... do that! ;)

    Pacific lobster isn't hard to get or expensive here but love them bugs. Nice take. RJ

    That looks really good. I just can't find any crawfish meat here. One day, there were whole, cooked ones in the butcher section, but they looked so small. It seemed like it would be a lot of work to get the meat out of such little things. And they had eyes!! Like mini lobsters. That sandwich looks great though.
