Barbequed corn with chilli and lime butter

- 8 corn cobs ,husk on shopping list
- wedges of lime shopping list
- salt shopping list
- chilli lime butter shopping list
- 1 fresh hot red chilli,halved seeded and finely chopped shopping list
- grated zest of two limes shopping list
- 200g butter,softened shopping list
- 1 clove of garlic,crushed shopping list
How to make it
- Pull down the corn husks leaf by leaf, remove silks, then carefully rewrap the cobs with husks, tying with string if nessasry..soak the corn cobbs in cold water for 15-30 mins.
- cook cobs in hot coals or bbq grill, for 15-30mins, turning often( check after 15mins)
- the cobb will steam and become tender,the moisture will prevent burning,but once the water has evaporated the sugars will caramelise,developing a rich sweet flavour.
- serve with chilli lime butter, or wedges or lime and salt.
- Chilli and Lime Butter
- mix all the ingreds together in a bowl, cover and chill until required, enjoy!
