Ingredients

How to make it

  • Place each chicken breast between 2 sheets of heavy-duty plastic wrap. Flatten to 1/4 inch thickness using a meat mallet or rolling pin.
  • Start bringing pasta water to a boil in a pasta pot or large saucepan.
  • Combine breadcrumbs, parmesan cheese, italian seasoning and pepper in a shallow dish. Dredge each chicken breast in flour. Dip in egg whites, dredge in breadcrumb mixture.
  • Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook 5 minutes on each side or until done.
  • Start cooking the spaghetti separately.
  • Preheat broiler.
  • Place the cooked and drained spaghetti in the bottom of a medium sized glass baking dish. Spoon one cup of the pasta sauce over the spaghetti. Spread the diced tomatoes on top. Arrange cooked chicken breast in a layer on top of that. Spoon the rest of the pasta sauce over the chicken. Sprinkle the shredded mozzarella on top of all.
  • Place the baking dish on a cookie sheet and broil for three minutes or until the cheese melts and starts to brown slightly. Garnish with basil and serve.

    OH Dugger! I adulterated your dish!
    Made it with Bbq chicken wings that were marinated overnight in the Bbq sauce then baked. Got the savory from the pasta sauce, the tang and sweet from the Bbq sauce, and fall off the bone wings. Coated the wings in the Parmesan breading. Doubled the recipe in a 10x15 casserole dish.
    OH SO GOOD.

    I made this last night and loved it! I did make a few modifications based on what I had in my pantry...I dipped the chicken in flour w/ salt & pepper, then in the egg, then in panko bread crumbs to coat. After browning the chicken it still needed to be cooked a little more, so I just put it in a casserole dish for 15 more minutes, then took it out and spread some of the sauce over the top then layered lots of mozz cheese. I broiled this for about 5 minutes until bubbly, and then just served this over the cooked spaghetti with a little extra sauce. SO GOOD! I will definitely make this again! Thank you!

    This sounds and looks fabulous! I decided to make it tonight. I had all of the ingredients accept for the mozzarella so I'm having to use provolone. Can't wait to taste it. My hubby's mouth is watering! Thanks for the recipe!

    Like I've said, recipes are a blank canvas you paint on with your own colors.. and ingredients. Next time we fix this I'm going to try some of your additions.

    Actually you've modified this enough to be it's own recipe. Maybe Chicken Parmesan Again Again?
