Ingredients
  • 4 each boned and skinned chicken breasts, about 4 ounces each
  • 2/3 cup seasoned bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon dried italian seasoning
  • 1/8 teaspoon black pepper
  • 1/3 cup flour, all-purpose
  • 3 large egg whites, lightly beaten
  • 2 teaspoons olive oil
  • 4 cups spaghetti, cooked and drained (about 8 oz raw)
  • 3 cups pasta sauce, details to follow
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced tomato (optional)
  • 2 tablespoons chopped basil, fresh or dried basil leaves

Directions
  1. Place each chicken breast between 2 sheets of heavy-duty plastic wrap. Flatten to 1/4 inch thickness using a meat mallet or rolling pin.
  2. Start bringing pasta water to a boil in a pasta pot or large saucepan.
  3. Combine breadcrumbs, parmesan cheese, italian seasoning and pepper in a shallow dish. Dredge each chicken breast in flour. Dip in egg whites, dredge in breadcrumb mixture.
  4. Heat oil in a large nonstick skillet over medium-high heat. Add chicken and cook 5 minutes on each side or until done.
  5. Start cooking the spaghetti separately.
  6. Preheat broiler.
  7. Place the cooked and drained spaghetti in the bottom of a medium sized glass baking dish. Spoon one cup of the pasta sauce over the spaghetti. Spread the diced tomatoes on top. Arrange cooked chicken breast in a layer on top of that. Spoon the rest of the pasta sauce over the chicken. Sprinkle the shredded mozzarella on top of all.
  8. Place the baking dish on a cookie sheet and broil for three minutes or until the cheese melts and starts to brown slightly. Garnish with basil and serve.

Ok, I have my own comment. Hmmm is that allowed? Anyhow, I have not been able to prepare a pasta sauce any better than that which I can buy. I've tried. Not happening. So for this recipe I use Ragu Chunky Onion and Mushroom sauce. You pick your favorite or do it from scratch. Whatever floats your boat. :]

Now I have a quandry...this tomorrow night or the Divan recipe! drats!

Hi Dugger - I've been searching for a good Parmesan Chicken recipe. This looks great, Thanks.

This was FABULOUS and so quick and easy to make. Thanks!!

Thanks Sunny, It is always great to have someone enjoy what you have done.

Doug,
As to your sauce comment, I, too, use a Ragu (plain or just chunky) and add sugar, more garlic and Italian seasonings, with extra basil.
Trust me, I think the secret to the sauce is the sweetness. I also like more Parmesan cheese added. (I'm a Parmesan addict!)

I like this recipe. I have some diet restrictions and will be forced to modify some of the ingredients but I am sure that it will be excellent. Thanks for making it available to us.

Oh, I make a veal cutlet paremsan and so will have to try this one as I love chicken. Thanks for sharing it with us.

OMG, this looks so good!

Doug, your "Chicken Divan" is now a regular meal at our house. This looks like another one to add to our favourites.
Thanks

Well thank you Vivian. That is a good thing. Glad you liked it.

Hey, Dugger...I made this dish for my boyfriend and I the other night. It was awesome. I added fresh garlic, mushrooms, and onions along with the tomatoes. { We like REALLY garlicky stuff ;)} Thanks for the awesome recipe. It was super easy.

Going to try it.

My broiler isnt working can i just put it in the oven for a few minutes to melt the cheese?

I'm sure you could bake it for a little while...

Jaymo,
Like I've said, recipes are a blank canvas you paint on with your own colors.. and ingredients. Next time we fix this I'm going to try some of your additions.

Actually you've modified this enough to be it's own recipe. Maybe Chicken Parmesan Again Again?
