Roasted Corn And Red Bell Pepper With Basil-shallot Vinaigrette

- 3 cups fresh corn kernels shopping list
- 1 red bell pepper chopped shopping list
- 1/4 cup chopped fresh basil shopping list
- 1 Tbs. minced shallot shopping list
- 1 Tbs. red-wine vinegar shopping list
- 1/4 tps. salt shopping list
- freshly ground pepper to taste shopping list
How to make it
- Preheat oven to 450 F. Toss corn, red pepper and oil to coat and spread out on a large baking sheet. Bake, stirring once, until some kernels begin to brown, about 20 minutes. Combine basil, shallot, vinegar, salt and pepper in a medium bowl. Add the corn and pepper; toss to coat. Serve warm or cold.
