I found this great little biscotti recipe from a flickr group I am a part of. This is PERFECT with my morning cup of joe.

Ingredients
  • 1/4 teaspoon salt
  • 3/4 cup white sugar
  • 2 eggs
  • 1/4 cup olive oil or canola oil
  • 1 1/2 cups pistachio nuts
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons vanilla extract
  • 1/2 cup dried cranberries
  • 1 teaspoon baking powder

Directions
  1. Preheat your oven to 300 F (aka 150 C).
  2. In a good sized bowl, mix together oil and sugar until it is well blended. Now mix in the vanilla extract and then beat in the eggs.
  3. Combine salt, flour, and baking powder. Slowly stir this into the egg mixture. Mix in the cranberries and nuts by hand.
  4. Divide your dough in half. Create two logs (about 12x2 inches) on a parchment paper lined cookie sheet. The dough might be sticky, so wet your hands with cool water.
  5. Bake for about 35 minutes in the preheated oven. When read the logs will be a light brown.
  6. Remove from oven, and set aside to cool for approximately 10 minutes. Reduce the oven heat to 275 F (135 C).
  7. Cut the logs on diagonal into 3/4 inch thick slices. Lay on their sides on parchment covered cookie sheet and bake about 8 to 10 minutes.
  8. Enjoy!

Simply incredible. I made these today and they might not make it until tomorrow's coffee. Mine took longer to bake, to get really crunchy, but that happens with my oven... Worth the wait.

Its in the oven, baked through round one! I couldn't stop myself eating the crumbs that fell! Fabulous recipe, great taste. I didn't have cranberries so I used currants soaked in hot water for 5 minutes for one half; and walnuts and choc chips in the other half! Would love to dip it into melted choc too!!!

This is one of my favorite biscotti recipes. It's super easy and you can play around with various nuts and dried fruit. I like toasted hazelnuts and chocolate chips.

Oh my gosh!!! I made this for our office breakfast and it was gone in 10 minutes!!! It was the hit of the morning, especially with the coffee drinkers!! This was the first time I made Biscotti and the recipe was so easy to follow!! It looked absolutely beautiful and tasted just as good! I dipped the bottom in white chocolate (almond bark) for a sweet kick!!! Thank you so much for the fantasic recipe! I will be making this many more times............You get my "5"!!! :-)

Alterations


just a quick note, Office pal would make these and to add a little extra touch, would dip the ends in chocolate or white chocolate, yum yum


For whole grain freaks, this recipe is also very good with white whole wheat flour!
