Vegan Mayonnaise Substitute Recipe
An easy way to make vegan mayo for sandwiches or other cold uses.

Ingredients
  • 1 ¾ cups lightly salted water
  • 8 oz. silken tofu
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 1 tsp nutritional yeast

Directions
  1. Bring the salted water to the boil, add the tofu and bring back to the boil.
  2. Immediately remove from the heat and leave for 3 minutes.
  3. Drain the partially cooked tofu.
  4. Place it in a food processor together with the lemon juice, salt and nutritional yeast.
  5. Process until smooth.
  6. Refrigerate until ready to use. Do not re-cook

Sure, they sock me $5.00 for a small jar of Nayonnaise at the health food store!!! I will definetly try to make this.
