How to make it

  • In a large bowl, beat together eggs, flour, baking powder, salt, and pepper. Mix in potatoes and onion.
  • Heat oil in a large skillet over medium heat. In batches, drop heaping tablespoonfuls of the potato mixture into the skillet. Press to flatten. Cook about 3 minutes on each side, until browned and crisp. Drain on paper towels.

    these sound like potatoe pancakes my mother use to make. she also used mashed potatoes in the pancake batter when she had left overs the night before. they are yummy gets my five.

    My Father would make these for us when we were kids, and i love them to this day, he added some fresh chopped garlic to his recipe.. My Dad is Hungarian and we put garlic just in about everything, inculding authentic Hungarian Paprika...

    The sauerbraten from my MIL is posted. Gingersnap gravy, it takes three days to make and believe me, I don't make it often. But honey, these are better than my mema's raw potato pancakes, I think. Don't tell her I said so.
