Rustic Chili

- 2lbs beef or venison roast or steaks, cubed(you can use a lesser cut of meat here, no problem) shopping list
- about 1 1/2 cups cooked black beans shopping list
- about 1 1/2 cups cooked black eyes peas shopping list
- about 2 cups crushed tomatoes shopping list
- about 1 cup diced tomatoes shopping list
- about 6oz tomato paste shopping list
- 1 large onion, chopped shopping list
- 6 cloves garlic, minced shopping list
- 1T dried Mexican oregano(or sub a couple T fresh) shopping list
- 2t ground cumin shopping list
- 2t ground coriander shopping list
- 1T chili powder shopping list
- 1/2-2t ground cayenne shopping list
- 1/2-1T ancho, pasilla or chipotle chili powder shopping list
- 1-4 fresh jalapenos or similar hot pepper, chopped shopping list
- 1-2 bell peppers, chopped shopping list
- about 1/4 cup red wine or balsamic vinegar shopping list
- 16oz bottle of dark beer shopping list
- couple dashes of liquid smoke shopping list
- kosher or sea salt and fresh ground pepper shopping list
- sour cream, chopped green onions, shredded cheese to serve shopping list
How to make it
- Combine all ingredients in slow cooker and cook on low for at least 8 hours, up to 12 or so.
- Stir occasionally after the first hours, and remove lid an hour or so prior to serving, if desired, to thicken.

I made this tonight and it was wonderful Keni! Very spicy, just like we like it, but easily could be cut back if needed. More in Lobsters IMI link --------> more

Mmmm sooo good! The heat was excellent, surprising enough, thought it would be too hot for me, and I like the heat and spices, but we enjoyed it. Mr. "Parsnickity pants" wants ground beef added to make more of a meat sauce with steak chunks...more
