How to make it

  • makes 2 pies
  • Peel and Slice tomatoes. Lay between paper towels 2-3 hours to drain.
  • Sprinkle salt, pepper and oregano over tomatoes
  • Bake pie shells
  • Layer tomatoes,
  • Sprinkle onions
  • Layer monterey jack cheese
  • Layer tomatoes
  • Sprinkle onions
  • Layer mozzarella cheese
  • spread 1/4 cup of mayonnaise over each pie
  • Sprinkle fresh grated parmesan cheese
  • Bake 350 degrees for 45 minutes
  • You might want to put a cookie sheet under the pie pans, sometimes it bubbles over.

    Hey, just wondering how it would taste without the mayo. I'm not a big mayo fan, and wondering if I could leave it out or should I substitute something in its place (bit of olive oil?) I have tons of fresh tomatoes from my mom's garden and this will be perfect! Thanks!

    That sounds wonderful - the tomatoes are so tasty right now, I will have to try this as soon as it cools down enough to turn the oven on again!
