Ingredients

Tomato Pie

Ingredients

2 frozen pie shells

1 small onion - chopped

7 tomatoes

Garlic Salt Pepper, Oregano to taste

1 small onion

8 oz. monterey jack cheese, grated

8 oz. mozzarella cheese, grated

Fresh grated Parmesan cheese

1/2 cup of mayonnaise

Directions

makes 2 pies

Peel and Slice tomatoes. Lay between paper towels 2-3 hours to drain.

Sprinkle salt, pepper and oregano over tomatoes

Bake pie shells

Layer tomatoes,

Sprinkle onions

Layer monterey jack cheese

Layer tomatoes

Sprinkle onions

Layer mozzarella cheese

spread 1/4 cup of mayonnaise over each pie

Sprinkle fresh grated parmesan cheese

Bake 350 degrees for 45 minutes

You might want to put a cookie sheet under the pie pans, sometimes it bubbles over.
