  • First layer:
  • ½ cup butter, softened
  • 5 tablespoons white sugar
  • 4 tablespoons baking cocoa
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups graham cracker crumbs
  • 1 cup coconut
  • Second layer:
  • 4 tablespoons butter, softened
  • 2 tablespoons cook and serve vanilla pudding mix (NOT INSTANT PUDDING mix)
  • 3 tablespoons milk
  • 2 cups powdered sugar
  • Chocolate Frosting:
  • 6 tablespoons milk
  • 6 tablespoons butter
  • 1½ cups white sugar
  • ½ cup milk chocolate or sem-sweet chocolate chips

Directions
  1. For first layer, hand mix ½ cup butter, white sugar, cocoa, egg and extract until fluffy.
  2. Stir in graham cracker crumbs and coconut.
  3. Press into an ungreased 7x11 pan; cover and refrigerate 1 hour.
  4. For second layer, mix 4 tablespoons butter, the dry pudding mix, milk, and powdered sugar until fluffy; spread over chilled crust and refrigerate 1 hour.
  5. To make the frosting, bring milk, butter and sugar to a gentle boil in a medium saucepan; boil an additional 30 seconds.
  6. Remove pan from heat and stir in chips; stir vigorously until chips melt and frosting becomes shiny.
  7. Cool frosting to room temperature; pour over second layer.
  8. Chill well before cutting; keep refrigerated.

Oh my ! I have a recipe for Nanaimo bars, but this one is different. It looks scrumptious! I feel like Im getting fat just from looking at all of these outstanding recipes...YUM! M


Ok, you both will have to share the Nanaimo bar recipe - is it Canadian also? jo_jo, I've only been to Horton's the one time, but the International Bars were definitely a winner!


Nanaimo Bars are wonderful. I messed up my first batch so badly, my Canadian friends had a good laugh at my expense. This looks like something the skating club would devour next event. Bookmarked and saved. Those kids can do some damage serious skating after some of these.
