Cheddar and Apple Frittata

- 6 large eggs plus shopping list
- 6 large egg whites shopping list
- 4 ounces shredded sharp white cheddar cheese shopping list
- salt and fresh ground pepper to taste shopping list
- 1 tablespoon butter shopping list
- 2 gala apples, peeled, cored, and sliced lengthwise into 1/8-inch-thick pieces shopping list
How to make it
- Preheat oven to 450 - place the rack in the top third of the oven.
- In a medium bowl, whisk together eggs, egg whites and half of the cheese - season with salt and pepper.
- In a medium oven-safe skillet, melt butter over medium.
- Pour in the egg mixture and let sit for 1 minute.
- Gently, but quickly, arrange the sliced apples on top in a circular pattern, starting from the outside edge.
- Scatter the top with the remaining cheese.
- Place the skillet in the oven and bake until frittata is set in the center and cheese is browned, about 20 minutes.
- Remove and carefully lift out the frittata onto a cutting board and let rest 5 minutes before cutting.
- Makes about 4 servings.
