This is an awesome condiment bursting with flavors. Makes a delightful honey and can be used anywhere honey is used. Enjoy

Ingredients
  • 10 pounds chopped watermelon
  • 2 lemons
  • 2 quarts cold water
  • 1/4 pound preserved ginger
  • 10 pounds sugar

Directions
  1. Pare watermelon.
  2. Discard rind and all of the pink portion.
  3. Grind white portion through food chopper using the coarse knife.
  4. Combine melon and water.
  5. Cook slowly until melon is clear.
  6. Add sugar, sliced lemon and ginger cut in small pieces.
  7. Cook slowly until thick.

Okay I am slow on the up take.Do I just use the white of the melon?love honey made with clovers and roses.I made that as a kid and do not have the recipe but this sounds like it is on the same line.


Yes, you only use the white part between the rind and the pink part. This is so good.


I remember making watermelon pickles years ago (and not just because of the scar on my thumb from the knife slipping), but they could not have been this good! How long does this keep?
