How to make it

  • In a bowl, mix flour, sugar, soda, cinnamon, and salt
  • Add eggs and vanilla, stirring until blended
  • Turn dough out onto a floured surface
  • Knead 8 - 10 times
  • Form dough into a log about 2x16 inches
  • Put log on a non-stick baking sheet (or one coated with non-stick spray)
  • Bake in a preheated 350 degree oven for 30 minutes
  • Remove and cool for 10 minutes
  • Place the loaf on a cutting board and with a serrated knife cut 1/2 inch wide slices on the diagonal
  • Place slices on their sides on the baking sheet
  • Reduce oven to 325 degrees
  • Bake biscotti for 10 more minutes
  • Flip all slices and bake for another 10 to 12 minutes.
  • Remove from oven and place on a rack to cool.

    Can't wait to see how this turns out (it's in the oven now)! I've been craving biscotti, but don't really want to spend the $ to buy some (it can be pricey!), and couldn't find a recipe that didn't call for lots of ingredients that I just don't have on hand - until now!

    This looks like a great recipe that can easily be made into many different versions. I love biscotti but am diabetic so have been looking for a recipe using a smaller amount of sugar. This is it! Thanks for the great recipe. I can't wait to make some!

    Thanks for this simple recipe! I made them today and am very pleased with the results. I found that once I added some chocolate/caramel chips, I had to add a few tablespoons of flour, as the chips somehow made the dough very sticky. But after that it was smooth sailing! Thanks!
