Ingredients
  • 1 cup Graham Cracker Crumbs
  • 2 oz. Butter, melted
  • 1 lbs. Gorgonzola Dolce
  • ½ lb. Mascarpone
  • 2 T. Flour
  • 2/3 cup Sugar
  • 3 eggs
  • 2 cups Sugar
  • ½ cup Water
  • ½ cup Heavy Cream or evaporated milk
  • ½ cup Madeira Wine
  • 6 Fresh Figs, halved

Directions
  1. Preheat oven 350’.
  2. Grease a 10” spring-form pan. Combine crust ingredients thoroughly, and press into the bottom of the pan.
  3. Bake 10 minutes. Cool completely.
  4. Mix the next 5 ingredients in a mixer until smooth.
  5. Pour into pan.
  6. Bake (in a water bath) for 1 hour, or until cake is set. Let cool.
  7. Caramelize the remaining sugar and water in a sauce pan over medium heat.
  8. Slowly stir in the cream and Madeira.
  9. Drizzle caramel sauce over cheesecake.
  10. Place fig halves around the rim of the serving plate and serve.

Wow. Mascarpone and gorgonzola dolce in the batter and Madeira in the caramel sauce. Beautiful! And figs! Who could possibly resist this?
