How to make it

  • Scrub potatoes well and dry thoroughly. Preheat oven to 325 F. and bake until you can pierce with a fork. Baking time is approximately 1 hour and 15 minutes.
  • Then cut the potatoes lengthwise and scoop out the centers, being careful not to tear the skins. Set aside empty skins. Mash potatoes and whip with butter, cream, salt, onion and cheese. With a fork, mix crab meat into potato mixture. Refill potato skins with mixture. Sprinkle with paprika, and reheat in a 400 F. oven for 12 - 15 minutes.

    These where really lip smackin as written. Dond's advice would probably put them way over the top. I doubled the recipe for all my girlfriends, and served it with a salad of frise and lemon curd dressing, and your rolls. It was all very pleasing.

    If you want to give this dish an extra little kick, you might think about mixing some pureed shrimp in with the potato mixture before stirring in the crab meat and baking. If you do that, you might want to use a milder cheese. Just a suggestion -- but only if you're feeling particularly decadent.
