Crab-Stuffed Potatoes

- 4 medium Idaho white potatoes shopping list
- 8 ounces of crab meat shopping list
- 1/2 cup butter shopping list
- 1/2 cup light cream shopping list
- salt and pepper to taste shopping list
- 4 tps. grated onion shopping list
- 1 cup grated sharp cheddar cheese shopping list
How to make it
- Scrub potatoes well and dry thoroughly. Preheat oven to 325 F. and bake until you can pierce with a fork. Baking time is approximately 1 hour and 15 minutes.
- Then cut the potatoes lengthwise and scoop out the centers, being careful not to tear the skins. Set aside empty skins. Mash potatoes and whip with butter, cream, salt, onion and cheese. With a fork, mix crab meat into potato mixture. Refill potato skins with mixture. Sprinkle with paprika, and reheat in a 400 F. oven for 12 - 15 minutes.
