My husband can't eat onions, so I substituted chives, which worked very well.

WoW! Crabmeat in a baked potato. The idea of scooping the potato out and adding cream, butter, and crab is going to be delicious. Thank you for a wonderful post! :D

If you want to give this dish an extra little kick, you might think about mixing some pureed shrimp in with the potato mixture before stirring in the crab meat and baking. If you do that, you might want to use a milder cheese. Just a suggestion -- but only if you're feeling particularly decadent.

These where really lip smackin as written. Dond's advice would probably put them way over the top. I doubled the recipe for all my girlfriends, and served it with a salad of frise and lemon curd dressing, and your rolls. It was all very pleasing.

Made these last night for my husband to take for his work lunch - this morning he hardly said hello before he asked if there was any left. Loved it, thanks!
