This is terrific on toast, ice cream, pancakes, french toast, whatever your imagination can dream up! The bourbon adds a nice touch. Remember to add a 1/2 T. of butter at the end to keep the foam down. The house smelled wonderful making this.

Ingredients
  • 5 c. sugar
  • 6 c. fresh peaches, peeled and chopped
  • 2 T. lemon juice
  • 1.75 ounce box of pectin
  • 1 T. Bourbon
  • 1 t. vanilla

Directions
  1. *Peel, pit and chop peaches. Put peaches in saucepan and use a potato masher to mash the fruit a little just to get some juice. You want the Jam to be chunky.
  2. *Add lemon juice and pectin.
  3. *Cook over high heat stirring constantly, about 5 minutes or until you have a full rolling boil.
  4. *Stir in sugar.
  5. *Return to a full rolling boil.
  6. *Boil hard for (1) minute while stirring constantly.
  7. *Remove from heat and add vanilla extract, dab of butter and bourbon (The bourbon is optional)
  8. *Skim off foam.
  9. *Ladle in hot sterilized jars and process in boiling bath for 5 minutes.
