- 1 whole Tenderloin pork roast, cut into medallions shopping list
- 1/2 lb. small fresh button mushrooms shopping list
- 2 eggs, lightly beaten shopping list
- 1 whole lemon shopping list
- olive oil to pan fry with shopping list
- 1/2 cup parmesan cheese shopping list
- 1/2 cup pine nuts for garnish (optional) shopping list
How to make it
- Prepare frying pan with oil and preheat.
- Dip pork pieces first in egg, then in paremsan and fry
- Do the same with mushrooms after the pork is almost done.
- When crispy and cooked on both sides, remove from heat and place on serving plate,
- Squeeze lemon juice ove it and sprinkle pine nuts.
- Serve hot.
