This Greek recipe is great with rice pilaf on the side. It's pan fried pork cutlets smothered in mushrooms.

Ingredients
  • 1 whole Tenderloin Pork Roast, cut into medallions
  • 1/2 lb. small fresh Button Mushrooms
  • 2 Eggs, lightly beaten
  • 1 whole Lemon
  • Olive Oil to pan fry with
  • 1/2 cup Parmesan Cheese
  • 1/2 cup Pine Nuts for garnish (optional)

Directions
  1. Prepare frying pan with oil and preheat.
  2. Dip pork pieces first in egg, then in paremsan and fry
  3. Do the same with mushrooms after the pork is almost done.
  4. When crispy and cooked on both sides, remove from heat and place on serving plate,
  5. Squeeze lemon juice ove it and sprinkle pine nuts.
  6. Serve hot.

I made this last night - very, very good...nice coating (I did add some Cavendar's Greek Seasoning to the medallions before dipping them) and the lemon juice on top was so delish. I have a picture - let me know if you'd like me to post it here for you! Good recipe, cy!!
