Cranberry Apple Puff Pancake

- # 1 cup milk shopping list
- # 4 Large eggs shopping list
- # 1 teaspoon vanilla shopping list
- # 2 tablespoons butter or margarine shopping list
- # 1/2 cup flour shopping list
- # 1/2 teaspoon baking powder shopping list
- # Dash salt shopping list
- # 1 tablespoon sugar shopping list
- # 1/8 teaspoon Fresh ground nutmeg shopping list
- # 1/2 cup sugar shopping list
- # 1/2 teaspoon cinnamon shopping list
- # 1/8 teaspoon Fresh ground nutmeg shopping list
- # 3 tablespoons unsalted butter shopping list
- # 1/2 cup Fresh or frozen cranberries shopping list
- # 1 apple (Granny Smith is great) shopping list
How to make it
- Preheat oven to 425 degrees.
- Mix first 4 ingredients and then add next 5 ingredients and mix well.
- Let stand for about 10 or 15 minutes.
- In a separate bowl mix 1/2 cup of sugar, 1/2 teaspoon cinnamon and 1/8 teaspoon of nutmeg.
- Put off to the side.
- Peal and slice apple.
- In oven proof skillet or cast iron, melt 3 tablespoons of unsalted butter sprinkle 1/2 of sugar mixture over butter.
- Spread evenly sliced apples and cranberries cook for 5-10 minutes.
- Add batter to skillet and place in oven for 15 min. then *reduce heat to 375 degrees* and cook for 10 minutes.
- Pancake is done when it gets really puffy.
- Serve with Maple Syrup or as a real treat, a scoop of ice cream. Oh so very Yummy... Enjoy!
