How to make it

  • Rinse chicken. In a Dutch oven, brown onions in peanut oil. When soft add 1 cup broth, lemon juice, chili powder and tomato paste. Cook for 5 minutes. Add red wine, ginger, pepper and another cup of broth. Add chicken and salt, bring to a boil and reduce to simmer. Cover and cook until tender. After 30-40 minutes, check doneness of chicken. Adjust spices. Cook another 15 minutes uncovered. Add hard boiled eggs, peeled and pierced with a fork several times. Cook additional 5 minutes. Serve with cottage cheese and either rice or African or Indian bread, like Naan.

    This is amazing. Many years ago, there was an Ethiopian restaurant here. They seasoned everything with "Ethiopian Red Spice." I know there was paprika in this, but I don't know what else was mixed in it. Do you? The food was divine. And I bet this dish is divine, too. I am going to make this within the next couple of days. I'll get back to you on it.

    In Ethiopia they serve this, and any other savory dishes, with Injera which is a spongy bread made from Teff flour. Teff is the smallest grain on earth, and the bread made from it is soft and wraps around the food. I have been meaning to post recipe for that, will do so shortly...great post, this is one of my all time favorites

    I have never heard of serving a meat dish with cottage cheese. Now I am going to have to look up how to make Naan bread. Since I love trying new things, this will be on my list. So what does Naan bread taste like? :D
