Spinach Au Gratin Recipe
This is an incredible recipe. Another one I obtained from an estate sale. I tried it and loved it. It is now a mainstay in my home as well as a pot luck favorite.

Ingredients
  • 2 packages frozen chopped spinach
  • 3 cups cooked rice
  • 4 eggs beaten
  • 1 can condensed cream of mushroom soup
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup grated Parmesan cheese

Directions
  1. Thaw drain and separate spinach.
  2. Toss with rice.
  3. Combine eggs, soup and seasonings.
  4. Stir into spinach mixture.
  5. Turn into greased 1-1/2 quart casserole.
  6. Sprinkle top with Parmesan cheese.
  7. Bake for 30 minutes at 350.
  8. Serve immediately.
