These are absolutely fantastic. One of the best appetizers I serve at all my card parties. It doesn't matter how many I make there are never any left. Yummy.

Ingredients
  • 20 large fresh mushrooms
  • 2 tablespoons butter
  • 1/4 cup finely chopped red pepper
  • 1/2 cup heavy cream
  • 1/3 cup crumbled blue cheese
  • 1-1/2 cups cooked rice
  • 1 tablespoon minced fresh basil
  • 1/8 teaspoon ground white pepper
  • Fresh basil chopped for garnish

Directions
  1. Clean mushrooms with damp paper towel then remove stems and finely chop stems and set aside.
  2. Sauté mushroom caps in butter in skillet until almost tender then drain on paper towels.
  3. Sauté mushroom stems and red pepper in skillet .
  4. Add cream and bring to a boil.
  5. Reduce heat and add cheese then cook until melted.
  6. Stir in rice, basil and pepper and cook until thoroughly heated.
  7. Spoon rice mixture into mushroom caps and place in greased shallow baking pan.
  8. Cover and bake at 350 for 10 minutes.
  9. Drain on paper towels and garnish stuffed mushrooms with basil.

I'm going to make these for lunch today...I bought four HUGE mushrooms this am, have heavy cream and blue cheese in the house (at the same time, no less!), and it will be a cinch to steam up some rice. I hope my Jack knows how lucky he is to have both of us. :-)

To quote Rachael Ray: "YUMMO!" Omigod these are good. I think I'll use the smaller mushrooms next time, the big ones are overwhelming. Jack mumbled something as he ate his plateful. When asked to repeat himself with his mouth empty, he said he wsn't too crazy about the mushrooms, but the filling sure was great! Whew! I've got some filling left over, so he'll be seeing it as a side dish. :-) I took some photos during the whole process, so I'll put them up for you.


A few weeks ago, I was looking for a recipe for stuffed mushrooms and totally missed this, somehow. Will definitely make soon. It doesn't even have any unusual ingredients! Just right!

I used to makea similar recipe, only it used a bottled blue cheese salad dressing, did not have the rice or spices, but used crushed cracker crumbs for filler.

It's great! I made a modification using fat free half & half. Also tried a variation with Feta cheese. Great base recipe for appetizers.

YUMMY I made this for Thankgiving and it was great everything I made for Thanksgiving was off this site and new to me. I made lots of these and they were all gone 5 forks.


I added a comment and then they said there was an error. Anyhow great recipe and I will make them. However for the occassion I had in mind SIL won't eat bleu cheese. Would you be insulted if I used Cheddar or something else she will eat?
