Rich,hearty and comforting. Given to me by elderly Italian man I work with

Ingredients
  • 2 small carrots,chopped
  • 1 stalk celery,chopped
  • 1 med. onion,chopped
  • 1 small cabbage,i" pieces
  • 5c chicken broth
  • 1c. tomato sauce or puree
  • 11/2t. sugar
  • 11/2t. salt
  • 1/2t. pepper
  • 1/2t. oregano
  • 1c. lentils

Directions
  1. Saute onion,carrots and celery in oil 5 mins. Add the rest of the ingredients and cook 45-60 mins.

Hi chef! The only thing I do differently is another 1/2 cup of lentils and when the dish is cooked I remove some of the soup and blend it in a blender..makes soup a little thicker.And as an Italian I must tell you that lentils on New Year bring luck.Your recipe is perfect tho.

This sounds yummy and unusual. Never heard of cabbage in lentil soup, but I will surely try it, since I love both!

I suppose the veggie broth gives it flavour. Sounds devourable.
