Ingredients
  • 3 cups of semi-sweet chocolate chips
  • 1 can of regular Eagle Brand sweetened condensed milk
  • 2 tsp. of vanilla extract
  • 1/2 cup of chopped glace cherries (Maraschino cherries will not work as they'll "bleed" into the fudge."
  • 1/2 cup of fresh mini marshmallows
  • *You can skip the cherries and add other dried fruits to the fudge, such as cranberries or apricots.

Directions
  1. Using a microwave-proof glass bowl, melt the chips and Eagle Brand together in your microwave for 1 minute.
  2. Stir and return to microwave for one more minute.
  3. Stir until milk and chocolate are well-combined.
  4. Stir in vanilla, cherries and marshmallows.
  5. Spread out into a lined 8 inch square pan.
  6. Chill for 4 hours in your refrigerator.
  7. Remove from pan, peel off paper.
  8. Cut into squares.
  9. Easy, isn't it?

These look easy and very good..


I have to add that last year, I just added the marshmallows and some whole walnut pieces to the fudge and then placed a halves of glace cherries (cut side down) on the top of the fudge, pressing them down gently into the chocolate in lines. I sliced the fudge after it had set so that a slice of cherry was on the top of each piece. If you don't like the cherries, don't use them and just make a simple Rocky Road fudge. (You can do this with the See's Fudge recipe as well!)
